From the Orinoco Region in the Colombia. This is our latest Cacao offering and the results have been inspirational. We roast these Cacao beans for about 2 hours: this is off key to industry standards, but we are a little adventurous.. and allow the internal flavours to develop slowly.
The end result is a bountiful of flavours, with all of the tannin and acidic flavours removed. We taste tones of Floral, Citric and Honey notes... this chocolate is a "let it melt on your tongue" adventure with many Ah-Ha moments over the tasting profile.
And as always, we hand-make and wrap each bar.
